Ingredients:
4 eggs
2/3 cup flour
2 (10-oz) packages frozen chopped spinach, thawed and squeezed dry
1 (24-oz) container low-fat cottage cheese
3 cups grated reduced-fat white cheddar cheese
1 tsp salt
1/4 tsp pepper
Directions:
1. Preheat oven to 350 F. Coat a 2-quart baking dish with cooking spray.
2. In a large mixing bowl, beat eggs and flour until smooth. Add spinach, cottage cheese, cheddar, salt, and pepper. Spoon into baking dish and smooth top.
3. Bake, uncovered, for 1 hour, or until heated through.
Cook’s Note:
This dish can be made up to two days ahead of time and kept in the refrigerator
