From Insanewiches: 101 Ways to Think Outside the Lunchbox
(St. Martin’s Griffin, 2011), by Adrian Fiorino, these adorable, healthy, and effortless PB&A bites will surprise and delight kids expecting a standard sandwich. Serve ‘em to a gaggle of grandchildren the next time they crash on your couch.
Ingredients:
1 red apple
1 green apple
2 tablespoons creamy peanut butter
Instruments:
Chef’s knife, chopping board, small heart-shaped cookie cutter, butter knife
Directions:
1. Cut two 1⁄2-inch slices from red apple and two 1⁄2-inch slices from green apple.
2. Remove core from each slice using cookie cutter, leaving a heart-shaped hole.
3. Spread 1 tablespoon of peanut butter onto 1 red apple slice and 1 tablespoon of peanut butter onto 1 green slice. Note: when you spread the peanut butter, excess will likely fall through the heart-shaped hole. This is okay.
4. Top each peanut butter slice with its respective color slice.
