Paula Deen's Sausage Quiche

Kids take a turn at baking a tart filled with cheese, sausage, and cream

Paula Deen brings her trademark infectious laugh, ebullient warmth, and witty remarks to a devoted audience of cooks, would-be chefs, and just plain admirers. One of Food Network's brightest stars, the restaurateur and cookbook author is all about family and is often seen cooking and kibitzing side by side with her two sons, Jamie and Bobby. And she's a fun-loving grandmother who's over the moon when talking about her grandson Jack Linton Deen. In fact, Deen dedicates her book, Paula Deen's My First Cookbook (Simon & Schuster Children's Publishing, 2008), to her grandson, in "hopes that he, too, will inherit the love of the kitchen."

The cookbook leads kids step by step through recipes they'll have a good time cooking and an even better time eating — and all have Deen's signature down-home flavor. She's included the role of "adult helper," giving you the chance to spend a fun time in the kitchen with the kids. For starters, have them read the recipe and assemble utensils and ingredients.Then the little ones can stir up things by making Deen's Sausage Quiche, a tasty delight on an autumn night.

What You'll Need

  • Medium skillet
  • Slotted kitchen spoon
  • Dry measuring cup (1 cup)
  • Liquid measuring cup
  • Small bowl
  • Whisk
  • Cookie sheet
  • Oven mitts or hot pads

The Recipe

  • 1 pound mild bulk sausage
  • One 8-inch deep-dish pie crust, in its aluminum plate
  • 2 cups grated sharp Cheddar cheese
  • 3 eggs
  • 1 1/2 cups half-and-half

What You'll Do

1. Turn on the oven to 350 degrees F. With an adult helper watching, sauté the sausage in the skillet over medium heat, breaking it up with a spoon as it cooks, Cook it until no pink remains, about 10 minutes. Using the spoon to lift it out of the skillet and let the fat drip back into the pan, spread the sausage in the bottom of the pie crust.

2. Sprinkle the cheese over the sausage. Break the eggs into the bowl (throw out the shells). Pour in the half-and half and beat them together with a whisk. Pour the mixture over the cheese.

3. Put the quiche on the cookie sheet and have an adult help you put it in the oven. Bake the quiche for 35 to 40 minutes, until the center is not jiggly.

4. Using oven mitts or hot pads, take the quiche out of the oven. Let it sit for about 15 minutes before you cut it into wedges.

Makes 8 small wedges or 4 big ones

This is also good for breakfast or lunch.

Wow--it doesn't get much worse than this! Quiche is bad enough, but the sausage and cream make this very unhealthy, certainly not suitable for breakfast!

Great teaching experiment! Get the kids to re-do this recipe using healthy ingredients (soy sausage, egg beaters, fat free half and half) so they get hands on ways to save their hearts in the the future.
