From Party Vegan: Fabulous, Fun Food For Every Occasion
(John Wiley and Sons, 2010) by Robin Robertson, these potato skins are so good, they’re reason enough to throw a party. Guaranteed to be a big hit, they can be assembled ahead of time, then covered and refrigerated until it’s time to pop them in the oven to heat and serve. Keep them in mind anytime you want something easy and delicious for a casual get-together.
Ingredients:
12 small new potatoes
Olive oil
1/2 cup vegan sour cream
2 tablespoons nutritional yeast
1/4 cup finely minced cooked vegan bacon (or soy bacon bits)
2 tablespoons finely minced green onions
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika, plus more for garnish
Directions:
1. Preheat the oven to 400 degrees F. Pierce the potatoes with a fork, arrange on a baking sheet in a single layer, and brush with the oil. Roast until tender, about 45 minutes. Set aside to cool.
2. When cool enough to handle, cut the potatoes in half. Use a teaspoon to scoop out and reserve most of the potato, leaving about a 1/4-inch edge intact. Place the potato skins on the baking sheet and set aside.
3. In a bowl, mash the reserved potato. Add the sour cream, yeast, bacon, green onions, salt, pepper, and paprika. Spoon a small amount of the mixture into each potato skin and sprinkle each with paprika. Bake until golden on top, about 15 minutes.
