Red Lobster Cheddar Bay Biscuits

From CopyKat.com's Dining Out at Home Cookbook (Ulysses Press, 2010), this right-on replica of Cracker Barrel’s signature side dish will make you feel like you're at the restaurant — minus the wooden tables, old-timey farm machinery, and white-washed rocking chairs. Serve the apples as part of a hearty breakfast, or just dig in for a snacktime treat.

Ingredients:
1/4 cup margarine or bacon drippings
6 tart apples, sliced in 3/8-inch slices
1 teaspoon lemon juice
1/4 cup brown sugar
1/8 teaspoon salt
1 teaspoon cinnamon
Dash nutmeg

Directions:
In a large skillet over low heat, melt the margarine or bacon drippings. Arrange the sliced apples evenly over the skillet bottom. Sprinkle the lemon juice over them, then add the brown sugar and salt. Cover the pan and cook over low heat for 15 minutes until the apples are tender and juicy. Sprinkle with cinnamon and nutmeg.

Serves 6
