Editor's Note: What could be cooler than ice cream? This recipe comes from Lottie of Austin, Tex. It's extra creamy and wonderfully lemony — we couldn't get enough of it!
Here's what Lottie told us about her creation:
"It was the first sweet treat that I made for my first grandchild, Isaiah. He just loved it. The ice cream is made with all-natural and organic ingredients. It's great for making ice cream sandwiches with funny-face cookies."
Prep Time: 1 hour
Chill Time: 1 hour
Ingredients:
1 pint organic heavy whipping cream
1 pint organic half-and-half
1 1/2 cups organic sugar
2 teaspoons vanilla extract
1/2 vanilla bean
1 teaspoon lemon extract
1 teaspoon lemon zest
1 free-range egg
1 cup organic whole milk
Directions:
1. Using an electric mixer on low speed, mix together whipping cream, half-and-half, sugar, vanilla extract, vanilla bean, lemon extract, and lemon zest in a large bowl.
2. In a separate bowl, combine egg and milk using electric mixer on low speed for 1 minute. Then cook mixture in a saucepan over low heat for 2 mintues, stirring continually. Let cool for 5 minutes.
3. Add cooled egg mixture to whipping-cream mixture and combine using electric mixer on low speed for 2 minutes.
4. Pour mixture into an ice cream maker and process according to the manufacturer's directions, approximately 30 to 40 minutes.
5. Transfer ice cream to a sealable freezer-safe container. Freeze until hard.
