Lobster Rolls

Make the Maine specialty right in your own kitchen

If you’ve ever visited the beautiful state of Maine, you know Lobster Rolls may be second only to Stephen King’s house in terms of local tourist attractions. Now you can make the New England specialty at home, thanks to Family Circle Healthy Family Dinners (Wiley, 2011). Lots of celery lends this delicacy its crunch, while a savory combination of Dijon mustard, tarragon, and hot sauce gives it a face-pleasing flavor. Not to mention, kids will love its simple serving vessel: a store-bought hot dog bun.

Ingredients:
2/3 cup light mayonnaise
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon chopped fresh tarragon
1/4 teaspoon black pepper
1/4 teaspoon hot sauce
1/8 teaspoon salt
2 lobster tails, cooked, shelled, and meat coarsely chopped (about 2 cups)
1 1/2 cups chopped celery
6 soft frankfurter rolls

Directions:
1. In a medium-size bowl, whisk together mayonnaise, lemon juice, olive oil, mustard, tarragon, pepper, hot sauce and salt.

2. In a large bowl, mix together lobster meat and celery. Gently fold in mayonnaise mixture until lobster meat is evenly coated. Cover and refrigerate for at least 1 hour.

3. Fill each roll with a generous 1/2 cup of lobster mixture.

Makes 6 rolls
