From The Kids Cook Monday, “These mini quiches are super easy, lower in calories and perfectly portioned for little eaters. Instead of a pastry crust, the quiches are nestled in little cups made from Swiss cheese, softened onions and crispy bacon.”
Ingredients:
1/2 tablespoon butter
1 small onion, chopped
8 eggs
1/2 cup skim milk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon freshly chopped parsley
1/2 cup shredded Swiss cheese
4 slices bacon, cooked crispy and chopped
Directions:
Kid: Preheat an oven to 375 degrees F and position a rack in the center of the oven. Coat two 12-cup muffin tins with nonstick cooking spray.
Adult: In a skillet over medium heat, melt the butter until foam subsides. Add the onion and cook 7 minutes, or until tender and golden.
Kid: In a medium bowl, whisk together the eggs, milk, salt, pepper and parsley. Set aside.
Kid: Add a pinch of cheese, onions and bacon to the bottom of each muffin cup.
Together: Fill each muffin tin until the batter just reaches the top of each muffin cup.
Adult: Bake for 15 minutes, or until the muffin tops are puffed and golden.
Makes 24 mini quiches
Best for ages 12-15
