Editor's Note: We received dozens of inventive recipes calling for cake mix as an ingredient, and we were most impressed by this pistachio cake recipe, submitted by Donna of Deford, Mich. Not only was it simple to make, but it looked "amazingly amazing," said our president, David Brinker, and it tasted amazing, said everyone in our office. There's a hint of orange flavor in this cake that complements the pistachio, and the addition of chocolate makes it soar.
Cake from a box? Why not — especially when you can make something as good as this? Here's what Donna had to say about her recipe:
"This is a Bundt cake that I made for my kids when they were young. My children are now 32, 43, and 46 years old, and they still love it. I now have to make it for my grandchildren and have been making it for most holidays and at many family gatherings. The warm chocolate filling is so yummy."
Prep Time: 20 minutes
Cook Time: 1 hour
Ingredients:
1 box white cake mix
1 package instant pistachio pudding mix
4 large eggs
1/2 cup water
1/2 cup vegetable oil
1/2 cup orange juice with pulp
Butter for the pan
Flour for the pan
3/4 cup chocolate syrup, plus more for drizzling
Directions:
1. Preheat oven to 350 degrees F.
2. In a large mixing bowl, mix cake mix, pudding mix, eggs, water, oil, and orange juice and beat for 5 minutes with an electric mixer.
3. Pour two-thirds of batter into a 10-inch buttered and floure d Bundt pan. Add syrup to remaining batter and mix well by hand.
4. Spoon syrup and batter mixture over batter in pan. Bake until toothpick inserted in center comes out clean, about 1 hour.
5. Let cake cool. Drizzle with syrup.
