Reader Vicky H. of Winston-Salem, North Carolina, submitted this mouth-watering breakfast recipe to Grandparents.com. "I grew up in the 1950s in a financially challenged household where Daddy worked hard every day and Mama worked just as hard in the home," she says. "Mama made chocolate oatmeal on cold winter mornings and we felt extra-special having chocolate for breakfast. Now that I'm a Grandmama, I've upped the ante by adding peanut butter to this special breakfast dish and hope to sweeten the memories for my grandchildren."
Regarding ingredient quantities, Vicky notes, "There is a tremendous difference in various brands of peanut butter, both in the taste and the consistency, so the addition of that ingredient is certainly more preference than any rigid measurement." The listed amounts are excellent guidelines, but feel free to experiment on your own – a little more cocoa here, a little less sugar there. In the end, it's all good.
Ingredients:
1 cup old-fashioned oats
1 cup water
1/2 cup milk (1% works well)
2 tablespoons brown sugar, packed
1 tablespoon unsweetened cocoa powder
1/4 teaspoon salt
2 tablespoons creamy peanut butter
Directions:
In a small saucepan, combine oats, water, milk, brown sugar, cocoa powder, and salt. Stir. Cook over medium heat, stirring frequently, 5-10 minutes, until the oatmeal reaches desired consistency. Stir the peanut butter in during the last minute or so, until completely dissolved. Serve right away.
Note:
Vicky says, "Nutella can also work here, instead of peanut butter. You may wish to cut the cocoa powder down if you use Nutella. Almond butter can be substituted, too. If I can get local honey, I'll add that occasionally."
