Unapologetically rich, warmly spiced, and topped with a sweet sour cream icing, this cake comes from reader Emily R. of Macon, Georgia. She created it after running out of ingredients for another dessert. "To my amazement, my children loved it," she says. "We make it quite often now. It's the moistest cake you will ever eat." She's not kidding. The cake is almost bar-like in texture, so sink a fork in and go to town.
Ingredients:
Cake:
3 cups flour
2 cups lightly packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1 tsp cinnamon
1/2 teaspoon ground cloves
1/2 cup mayonnaise
1/2 cup melted butter
2 tablespoons vinegar
1 teaspoon vanilla
2 cups cold water
Frosting:
1/2 cup sour cream
3 1/2 cups powdered sugar
1 teaspoon vanilla
Directions:
1. Preheat oven to 350 degrees F. Grease a 13x9 baking pan.
2. In a large mixing bowl, combine flour, brown sugar, baking powder, salt, cinnamon, and cloves.
3. In a separate bowl, combine mayonnaise, butter, vinegar, and 1 teaspoon vanilla. Pour wet ingredients into dry ingredients. Pour cold water over entire mixture. Mix on low with an electric mixture, about 3 minutes.
4. Pour batter into prepared cake pan. Bake 30 minutes, or until toothpick inserted into center of cake comes out clean. Let cool completely.
5. While cake is cooling, combine sour cream, powdered sugar, and 1 teaspoon vanilla in a small bowl. With a spoon, mix until thoroughly combined. Spread over cooled cake and serve.
