Make sure you sample these Chocolate Peanut Butter Balls before you serve them, because once you make them available to the crowd, they'll be gone before you can even lick your fingers. From Katie Lee's The Comfort Table: Recipes for Everyday Occasions (Simon Spotlight Entertainment), this delectable finger food makes an excellent snack for gatherings, or a dessert for special days. Grandchildren can pitch in by dipping the peanut butter in chocolate.

1/2 pound (2 sticks) unsalted butter
1 cup creamy peanut butter
1 teaspoon vanilla extract
3 1/2 cups confectioners' sugar
8 ounces semisweet chocolate, chopped

1. Line a baking sheet with parchment paper.

2. In a medium saucepan over low heat, melt the butter with the peanut butter.

3. Stir in the vanilla. Remove from the heat. Stir in the sugar until smooth. (The mixture will be the texture of thick dough.) While still warm, use your hands to shape the dough into balls by the tablespoonful. Place on the baking sheet.

4. In a saucepan over medium-low heat, melt the chocolate, stirring constantly. Remove from the heat and use a toothpick to dip balls halfway in chocolate. Place back on the baking sheet. Refrigerate until set, about 1 hour.

Serves 6 to 8
